Combine yeast, water, sugar, salt and olive oil. Let sit 5 min until the mixture becomes foamy. This indicates that your yeast is active.
Add 6 cups of flour to the liquid mixture. Combine and let sit 5 min.
Knead dough with spoon, or dough hook. Gradually add in up to 6 more cups of flour to make a dough that doesn't stick to your hands, but is smooth and soft.
Grease your bowl and cover with a warm, wet tea towel. Let rise until doubled (approximately 1- 1.5 hours).
Drizzle olive oil and sprinkle corn meal over pizza pans. Divide dough evenly and place in the middle of the pans. Push and flatten dough to the edges of the pans. Let rest 5 min before adding toppings.
