This hot honey recipe is so easy to make and is the perfect accompaniment to all of your homemade cheeses! My favourite way to serve this hot honey is baked with homemade brie or drizzled on cream cheese or quark.
Recently I was visiting my friend and she mentioned hot honey. I had never heard of such a thing, but now that I have, my life is changed. I now firmly believe that all cheesemakers should know how to make hot honey, its the perfect cheese accompaniment!
What is hot honey?
Hot honey is a honey that is infused with chilis to make a sweet, slightly spicy condiment. It only takes about 20 minutes to make and keeps on the shelf nearly indefinitely. You can use it as a drizzle for all of your homemade cheeses, to top on pizza, to marinade meat…. the list goes on! I actually find the taste of hot honey very similar to red pepper jelly, with the added bonus of no refined sugar!
Ingredients
- Honey– You can use any kind of honey to make this recipe. I actually prefer to use the old honey at the back of the cupboard (you know the stuff that’s hard to get out of the jar), because the heating process will make your honey spreadable again.
- Dried red pepper chili flakes
- Apple cider vinegar
Supplies
- Saucepan
- Spoon
- Measuring cups and spoons
- Fine mesh strainer
- Clean glass jar
How to make hot honey
- Combine honey, chili flakes and apple cider vinegar in saucepan.
- Over medium heat, bring honey mixture to a simmer and immediately remove from heat.
- Let honey mixture rest for 15 minutes so flavours can infuse into honey.
- Strain honey mixture through a fine mesh strainer into a clean jar.
- Let cool completely in the jar before covering and storing in the cupboard for up to 4 months.
How long does hot honey last?
Hot honey is shelf stable and will last for months. If you notice it becoming crystallized, you can simply heat it back up again to change it back to its liquid form.
How do you use hot honey?
I mostly use it on homemade cheeses but the possibilities are endless. I have heard everything from a drizzle for homemade pizza to a marinade for salmon. Basically anywhere where you might normally use honey, sub this easy hot honey!

Ingredients
- 1 cup honey
- 2 tbsp dried red pepper flakes
- 1 tbsp apple cider vinegar
Instructions
- Combine ingredients in a saucepan and bring to a simmer over medium heat.
- Remove from heat and let rest for 15 minutes.
- Strain honey into a clean jar.
- Let completely cool before covering and storing in the cupboard for up to 4 months.
