Hello – not sure where to ask this question so I’ll try here. Looking forward to making the naturally acidified mozzarella but would like to make a 2-gallon batch. Can I just double everything and proceed as written except for the longer brining time? Will doubling extend any of the other times?

Yes you can double the culture and use your package directions on the rennet bottle for 2 gallons of milk. The time won’t change regardless of how big your batch is:)

Another option is to login to the my account page on the website (use the login details you created at checkout) and in the dashboard you will find “downloads”. It will be in there to redownload. If you no longer have those emails (there should be 2) you can use the account details you created at checkout to login to your “my account” and in the dashboard along the left hand side of the screen you will see a “download” page.
